In Nov 2022, I had requested a vodafone contract but due to a mistake from DHL I never received my equipment, hence could never start my contract. I was informed to request the equipment again and my old account request was voided. However, I kept receiving billing requests for the initial account that was never even activated. Now I'm receiving letters from Riverty about my default payment. How can this be resolved.

You are bound to the initial contract - if you don't accept the parcel (or it is not delivered to you duue to an error in your address), then the return does NOT constitute a withdrawal.
If you now opted for a second (new) contract instead of just asking for re-sending the equipment to you, you are now bound to two contracts and have to pay for both...
And there is no separate activation or usage required in order for any billing. Once the contract starts -and it starts by the initial sending of the equipment- you are billed for the contract as Vodafone did all the necessary steps to provide you with the line.
